Cookery School
Inchiquin Cookery School offers you a real weekend of indulgence by combining the love of home cooking and living country life all in a period Georgian home.
One Day Courses
Starting at 10 a.m. with an introductory glass of bubbly in the drawing room you will move to the house kitchen and be part of a small group learning about the essential elements of home cooking. Participants receive a recipe booklet and a branded pen to take home. The Course finishes at 4 p.m.
Your Cookery School Weekend
Arriving on Friday afternoon, you will be greeted by a glass of bubbly and nibbles, after which you will be wined and dined before relaxing with an evening drink in front of the drawing room fire.
On Saturday morning, after a continental breakfast, you start your cookery class for the day with Chef Liam, with lunch in between. In the early evening you will have a few hours to take a stroll on the estate, or lounge in front of the fire with your weekend papers. At seven, while you have your pre-dinner drinks, Liam will be putting the finishing touches to the candle-lit dinner in the dining room, which you have prepared earlier. Our resident waiter will also ensure that your wine glass stays healthily full!
Sunday is up to you, after a continental breakfast – either learn how to cook that perfect light and healthy lunch with Liam from ten until half-past one, or explore the magic of Clare for a morning. After a late lunch, we will say our reluctant goodbyes and hope to see you again soon.

Chef Liam
Inchiquin House is delighted to have Liam as the resident Chef for its Cookery School and catering services. Liam completed his initial training in Rosslare after which he spent two years in Marfield House in Gorey, part of the Relais & Chateaux group. There he was under the Head Chef who had moved over from the prestigious Michelin stared La Gavroche restaurant in London. Over the following two years Liam worked under Peter Hayden of the Blue Book’s Gregan’s Castle, in Ballyvaughan, north Clare. Liam didn’t have far to travel to his next destination, the well known O’Briens Restaurant and Bar in Ballyvaughan town itself, which he ran for 5 years. Since then he has turned his extensive skills towards catering, first of all in the Auburn Lodge Hotel in Ennis, and more recently for the Corporate Catering Group.
